July 13th
Finally, I released my project, which I have been working on since April. It was a huge task that took me a long time to complete. However, I am happy to release it with such high quality, even beyond my own expectations.

I know that I need to spend all of my time preparing for the SANS training, but I couldn’t resist the urge to watch “VIVANT” on Netflix. I watched the last two or three episodes today, and it was so interesting. I promise I will study as much as I can starting tomorrow!
July 15th
I prepared some bread dough for tomorrow. I followed the same recipe that I used before for the raisin yeast.
July 16th
I baked bagels and sourdough. The bagels were a success, but the sourdough didn’t turn out as well as I hoped. It still has the same issue as before: it doesn’t have an open crumb (the nice holes inside the bread).
I think I need some proper oven equipment, like a baking stone, that can help generate a high volume of steam to keep the surface of the bread from drying out while baking.
July 17th
I cooked beef stew because I realized I hadn’t made it in a while.
July 18th
I decided to finish reading volumes one and two of my book today.
